About the event

When most people think about “fine dining,” French cuisine is often treated as the gold standard. But in Canada, that wasn’t always the case. In fact, it wasn’t until after WWII that French cooking began shaping what “fine dining” meant in Canadian culture.

So why does French food dominate “fancy” dining in Canada instead of our own food? How did WWII and postwar politics reshape Canadian food culture? And why is Canada positioned to lead the next phase of fine dining?

Join us for this week’s Boozy Lecture with Chef + Food Historian, Dr. Ryan Whibbs, as he dives into rare archival evidence and vintage Canadian menus to deconstruct the relationship between food, power and culture.
